Ingredients for making corn cake:

 2 cups of canned corn or shelled cobs

 1 cup of sugar (160 grams)

 1 cup of vegetable oil

 1½ cups of regular or coconut milk

 2 cups of wheat flour (280 grams)

 3 medium eggs

 1 tablespoon of chemical yeast

 1 pinch of salt

How to make corn cake:

The first step in the corn cake recipe is to drain the corn (if you are using tin corn) and place it in a blender with half a cup of milk. Beat for 2-3 minutes to mash all the corn.

Tip: Turn the oven on at 180ºC to preheat.

Add the rest of the milk, oil, sugar and eggs and continue beating, this time for 2-3 minutes or until these simple corn cake ingredients are mixed well.

Gradually add the sifted wheat flour, beating between each addition until well incorporated. Finally add the yeast and salt and mix with a spoon.

Tip: if the dough for this corn cake is too thick, add a little more milk (up to half a cup).

Pour the corn cake batter into a medium cake pan, greased with oil and dusted with flour. Bake it in the oven at 180ºC for about 40 minutes or until it passes the toothpick test: when you stick a toothpick in the center and it comes out dry, the cake is ready.

Tip: If you want a thinner cake batter, pass it through a sieve before placing it in the pan.

Once this fluffy corn and wheat cake is done, remove it from the oven and let it cool a little. Unmold, serve it simple or sprinkled with icing sugar and good appetite!
